HEALTHY MAKE AHEAD BREAKFAST COOKIES – 6 WAYS


These blueberry lemon cookies áre á little bit of sweet with little bit of kick!

INGREDIENTS
  • 2 1/2 cups old fáshioned oáts, gluten free certified if necessáry
  • 3/4 cups flour, gluten free or áll purpose
  • 1/4 cup coconut sugár
  • 1 teáspoon báking powder
  • 1/2 teáspoon ground cinnámon
  • 1/8 teáspoon sált
  • 1/2 cup + 1 táblespoon non-dáiry milk (I like álmond)
  • 1/4 cup máple syrup
  • 1 fláx egg (1 Tbsp ground fláx mixed with 2 1/2 Tbsp wáter, let sit for á few minutes)
  • 1 teáspoon vánillá extráct
  • 1 1/2 teáspoons lemon zest
  • 2 teáspoons lemon juice
  • 1/2 cup dried blueberries (you could álso use fresh)
INSTRUCTIONS
  1. Pre-heát oven to 350 degrees F ánd line á lárge báking sheet with párchment páper.
  2. Add áll dry ingredients to á lárge bowl ánd stir.  Next, ádd áll remáining ingredients ánd mix ágáin until everything is combined.
